Casale degli Orti is an organic farm that produces organic extra virgin olive oil in Pitigliano, following a careful and respectful approach toward the land and its natural rhythms. The farm’s olive grove consists of approximately 600 trees, cultivated without the use of chemical pesticides and with agronomic interventions limited to the strictly necessary.
Oil production represents a fundamental part of the agriturismo’s identity, an expression of a deep bond with the territory and local agricultural tradition.
Cultivars and harvesting
Casale degli Orti organic extra virgin olive oil is obtained from olives of the Leccino, Frantoio, and Canino cultivars, varieties typical of this area of Tuscany. Harvesting takes place between mid-October and mid-November, at the ideal moment of ripeness.
The olives are harvested with the aid of mechanical tools and transported within a few hours to a certified organic mill located a few kilometers from Pitigliano, to preserve the quality of the product and limit oxidation.
Processing and quality
Once harvested, the olives are processed using methods that keep the organoleptic characteristics of the oil intact. The resulting oil is subsequently filtered to remove any impurities and ensure greater stability over time.
This process results in a balanced organic extra virgin olive oil with a harmonious aromatic profile, suitable for both daily use and for enhancing simple, genuine dishes.
